Benefits of A Low Glycemic Gluten Free Diet For Diabetes

Lowering the glycemic index of your diet can improve managing your diabetes.  This includes avoidance of such foods as potatoes cooked in certain ways and white bread. Instead consider multi-grain and sourdough breads, legumes and whole grains that are converted more slowly to glucose in the bloodstream.

Foods high in easily digestible carbohydrates (e.g., sugar, bread, pasta) are limited or replaced with foods containing a higher percentage of fats and moderate protein (e.g., meat, poultry, fish, shellfish, eggs, cheese, nuts, and seeds) and other foods low in carbohydrates (e.g., most salad vegetables such as spinach, kale, chard and collards), although other vegetables and fruits (especially berries) are often allowed.

Carbohydrates are classified according to their glycemic index, a system for measuring how quickly a food that is eaten raises blood sugar levels, and glycemic load, which takes into account both the glycemic index and the amount of carbohydrate in the food. This has led to carbohydrate counting, a method used by diabetics for planning their meals.

Figuring the proper glycemic index of foods you eat can get complicated though because you have to take into consideration other things such as portion size, fat content, etc.

One way around this is to use a diet plan or a cookbook that has taken all these actors in consideration in their recipes.
